Bar Chef Albert Trummer will open Apothéke in Chinatown early next month after he wraps up pre-opening Fashion Week parties and puts the final touches on his menu of over 200 cocktails. Trummer's "liquid cuisine" is the result of spending years researching the finest ingredients at farmers markets, small batch distillers and out of the way herb and botanical purveyors.
