Critic Reviews

The verdict? Easy: Hill Country is one of the finest new barbecue spots to open in New York in quite some time. - Peter Meehan

All these items are sold in bulk, like at a butcher shop, and priced by the pound, and unless you're careful (I wasn't), the sheer volume of fatty meat products will send you grappling for your Lipitor. - Adam Platt

The guys behind Hill Country are about as Texan as Bloomberg in a Stetson, but the 'cue deserves Lone Star cred all the same. Sausage imported from Kreuz market...

The New Yorker 09/03/07

Earlier this year, the Texas House of Representatives passed Resolution 2959, which declared that by sharing the culinary tradition of his hometown and state, Marc Glosserman, Hill Countrys owner, is certain to please homesick Texans and hungry New Yorkers alike. - Mike Peed

It's self serve mostly, so service doesn't apply. Order the moist brisket

Decent BBQ in a semi-self serve atmosphere. The wait staff is also only semi-attentive when it comes to bringing the beverages. Try the Moist Brisket and the sausage. I hope they will bring on some better tasting side dish options. The pale in comparison to the meat.

Just a shame. This place had potential. Their business model results in the staff carefully manipulating you and your party around (is that a velvet rope between the bar and restaurant- REALLY??) such that they will not miss the revenue from a side order, etc. Heaven forbid. The only thing you end up feeling is "handled". Go to Blue Smoke. I was embarrassed to bring two of my friends there. The food? That was ok, but they are going to have to make some serious changes...
