Pamplona is Urena with an attitude adjustment, and I emphasize the word adjustment. Mr. Urena hasn't wholly reinvented the restaurant or himself. He's still interpreting Spanish cuisine, and -- lucky for us -- still indulging his fanciful impulses. - Frank Bruni
